Salisbury Steak with Mushroom Onion Gravy

1 ounce packet onion soup mix
2 cups water
1 1/2 pounds lean ground beef
1/4 cup parsley -- loosely packed
4 1/2 tablespoons flour -- divided
1 1/2 tablespoons butter or margarine
1 large onion -- peeled, halved and sliced
12 ounces sliced mushrooms -- sliced or (2) 4 ounce cans mushrooms
1 beef bouillon cube -- or 1 teaspoon beef base
Mix 2 tablespoons of the soup mix and 1/4 cup of water in a large bowl. Add ground beef and parsley; mix with hands until blended. Shape into 4 oval patties, about 5 inches long and approximately 2/3 of an inch thick.
Coat patties with 2 tablespoons of flour. Melt butter in a large skillet over medium heat. Add patties and cook about 10-15 minutes, turning over once. Cook until crusty and no longer pink in the middle. Remove patties to a plate.
Add onions, mushrooms and 1/4 cup of water to drippings in skillet. Stir with a wooden spoon to scrape up any brown bits on bottom. Reduce heat to medium-low, cover and cook, stirring occasionally, until onions are soft, about 10 minutes. Stir in mushrooms.
Mix remaining soup mix, 1 1/2 cups water and 2 1/2 tablespoons of flour in a medium bowl. Stir into mushroom mixture, add bouillon cube and bring to a boil. Cook, stirring often, until thickened, about 3 minutes.
For OAMC: Pour some gravy into an 8 x 8 aluminum pan, then place patties on top. Pour the remaining gravy over top. Cool. Then cover and label.
For serving day: Thaw in refrigerator overnight and reheat at 350�F for 30 minutes and heated through.

NOTES : This recipe makes pretty large servings. Instead of the 4 patties, you can make 6 patties. Also good made with ground turkey or even half ground beef, half ground beef.
